Shortbread! The famous Christmas time biscuit...! :) To celebrate Christmas in July (actually I just came up with this "excuse" - then again, when do you ever need an excuse to bake/cook! Just do it! :P) - I baked 2 batches of these on Tuesday night! It turned out good - light, crisp, totally buttery and the perfect biscuit with a cup of coffee!!!
To add a bit of a twist, I made pinwheel shortbread as well - basically just made a chocolate paste (a bit of water and cocoa powder) and mix this in with the vanilla mixture. It is a little more work then the vanilla ones, as you need to roll them out separately and then place them on top of each other and slowly roll them into a long roll :) Then cut them and shape them into a round shape.
Dust the vanilla ones with a bit of caster sugar when it gets out of the oven - adds a nice touch to them!
I found the perfect jar for the cookies - from Freedom Furniture - :) It is an airtight jar, so that the biscuits remain crispy and fresh! And what's great is that this is actually a plastic jar!
(p.s. Surprise surprise, but there was not a lot of cooking this weekend! I cooked a steamed herbal chicken stuffed with glutinous rice, and made 3 egg spinach dish... however no pictures... sorry.... next week there will be more cooking!!! I have a week to come up with a great dinner meal! :P)

The cookies look great! I doubt they will last long enough to find out if the jar is infact air tight. :)
