Ok, I think it is official! I am obsessed! I feel obsessed! I think I'm totally obsessed with cooking and baking! Too bad it's not my full time job!
I have discovered these fantastic food blogs (makes mine look absolutely pathetic!:P) with wonderful links and awesome creations, which I would love to try out (Eg. Green tea marble cake, strawberry tiramisu... YUMMY!)!
Just in the past 15mins, it has even crossed my mine to either move or go for a holiday to the US as they seem to have these amazing bakeries, chocolate shops, restaurants and fantastic cookbooks! (Check this chocolate place out in the US - talk about cool chocolate varieties - http://www.vosgeschocolate.com/) Now I wish I had paid more attention to all these things when James and I visited the US in 2004!
I'm about to watch the OC which starts in exactly 2 mins - finally after weeks and months of not watching it on TV (due to my own impatience! My friend Trish which has been so sweet as to send me copies of the series, so I would be totally up to date and infront) - for those people who detest the OC - I apologise - but seriously check it out before you conclude that! :P
Anyhow it's breaktime now... so yes wanna know what happened to my apple sponge pudding? Turned out that it wasn't that bad after all - in fact my mum really liked it, and had it with ice cream! It actually does have a great texture, light, fluffy and perhaps one of the better sponges that I have made that hasnt got those occassional annoying air holes in it! Infact, the use of the custard powder with the flour was a good touch - made the sponge a nice yellow colour, which made it look more appetising! :) I think perhaps the trick to this great texture was the beating of the eggs before adding in the sugar? Process of elimination.
Despite all of the above, I still decided to turn the apple sponge pudding into another dessert (in a way so I could also have more photos!:P) - so right at this very moment, the apple sponge pudding is being transformed into a trifle - the jelly over the sponge is currently sitting in my fridge, it's nearly set. I'll make some instant custard (havent mastered real custard yet!) and pour it over, and tomorrow before cell, I'll whip up some cream and pipe it over the dessert. Perhaps some chocolate flakes or 100s & 1000s as decoration :)

Obsessed with cooking? I guess there are worse things to be obsessed about (like shopping!!).
Don't lose heart so soon, I'm sure those 'amazing' food blogs had to start small. By the way, it could very well be a professional site. Yes, there are professional bloggers out there who are paid to make their blogs pretty & interesting.
Looking forward to seeing (and tasting) the 'trifle' (previously known as apple sponge pudding).

My critique ...
Yum! So there it was, a layer of the raspberry jelly at the bottom (pinkish red) with chunks of apple, then a layer of yellow custard and sponge. Finally topped off with whipped cream smothered with 100s & 1000s.
Overall a nice dessert, not too sweet, just right. The apple chunks held together well and had enough texture without being too hard. The custard was fragrant and the 100s & 1000s in the whipped cream added a nice crunch.
The verdict .... 2 thumbs up!!
